Chicken Chicken Bang Bang

This recipe makes a tasty, quick lunch if you’re home during the lunch hour, but they’re also great to pack and go if you (or hubs) work outside of the home and have access to a refrigerator and - close your eyes Serene - a microwave. Add the seasoning mixture to the Baking Blend and mix.

Put the chicken in a bowl, spray with coconut oil, then toss with the Baking Blend mixture.

Melt the coconut oil in a medium skillet over medium-high heat. Add the chicken and garlic, and sauté until lightly brown, 3 to 4 minutes. Remove and set aside. If using other veggies (like red pepper or broccoli), cook them on medium- high for a few minutes in the skillet.

Blend all the remaining ingredients except the noodles in a blender on high until the jalapeño is pureed. Pour the sauce into the skillet and cook, whisking well, over medium heat until it is reduced a little and starts to thicken.

Add the Not Naughty Noodles or Troodles and chicken to the skillet, and stir.

"Serving Suggestions from Cindy"
- Cindy pairs the sauce with shrimp, but we decided to try it with leftover cooked chicken. You can stick to peeled and deveined shrimp, if you prefer, but the quick breaded chicken option we do for a speedy lunch is wonderful - and sprouted tofu works just as well, too.
- Can be made FP by reducing butter to 1 teaspoon, not going over 4 ounces of meat, and using Greek yogurt in place of the mayo.
