Trim Healthy Mama and the crockpot work wonderfully together. This is reminiscent of spinach dip. It’s easy-peasy and gives you a nice dose of healthy greens. Chicken Florentine can be found on Page 46 of the Trim Healthy Mama Cookbook.

Instructions

  1. Place the frozen spinach at the bottom of the crockpot.
  2. Add the thawed, drained chicken breasts.
  3. Blend the cream cheese with the seasonings (except the cayenne) and add to the cooker.
  4. Add the onion and broth.
  5. Cook on low heat all day or on high for 5 to 6 hours.
  6. Break up the chicken, and combine with the sauce before serving. Season to taste with the cayenne (if using).

FOR FREEZER-TO-CROCK PREP: Label frozen bag of chicken breasts as “Chicken Florentine – S” with a Sharpie. Blend the cream cheese with the broth and seasonings, pour into a freezer bag, and add the onion and frozen spinach. Label bag with name of recipe. Put both bags in the freezer next to each other. The morning before cooking (24 hours prior), put the chicken and sauce bags in the refrigerator to thaw. Next morning, pour off any excess fluid from the chicken and place the chicken in the crockpot. Add the sauce.

Electric Pressure Cooker/IP Modifications: Put all the ingredients in the pot except one of the packages of cream cheese. Decrease broth to 1 cup. High pressure 30 min. 15 min. NPR, then QR. Add the second package of cream cheese and stir to melt. If it's too thin let it simmer for awhile to cook off excess liquid.


NOTE: This recipe tweak was created and tested using a 6-quart Instant Pot. If you are using a different brand or different size electric pressure cooker, consider modifying the recipe as your results may vary from ours. Example: If you are using an 8-quart, consider adding more liquid as the larger circumference often needs more liquid to come to pressure.
