Description

There is nothing like homemade THM Chicken Tenders!! These chicken tenders are scrumptious dipped into our homemade Honey Mustard Dressing or Ketchup. You can find these recipes in the Gravies, Sauces, and Condiments, Chapter 25, of the original Trim Healthy Mama book.

Instructions

  1. Poach or pre-bake 1 bag of frozen chicken breasts or tenderloins.
  2. Slice cooked breasts into strips or cubes.
  3. Put 1 Tbs. mayonnaise onto chicken pieces and work with your hands to make sure each piece has a thin covering.
  4. Grind 1 Joseph's pita bread in coffee grinder or blender. Season ground crumbs with generous amounts of salt, pepper, and onion and/or garlic powder.
  5. Roll chicken pieces in bread crumbs until they have a good coating and fry in coconut oil until nicely browned. You can also roll the chicken pieces in store-bought coconut flour.
