This recipe is in the "Sweet Treats - Quick Single Muffin" section of the Trim Healthy Mama Cookbook, page 279. Makes 1 large "muffin in a mug" or 2 smaller muffins in the oven.

Instructions

  1. Preheat the oven to 350°F if baking the muffins. Lightly coat an 8-cup muffin tin with coconut oil spray.
  2. Mix all the ingredients in a large coffee mug for microwaving or in a small bowl if using the oven. Microwave for 1 minute 15 seconds.
  3. Or divide the batter and place in 2 muffin holes, then fill the remaining holes with water (for a nice steaming effect) and bake for 15 to 17 minutes, or until just done on top.
  4. Top the muffin with a pat of buttah!
