For the Chocolate Berry Boost Bars
For the Optional Dusting (great without, but adds a little sumpin')
Instructions

Place the cranberries in a food processor and process until finely textured. (During the processing you might need to stop your processor and break things apart with a fork and position some stuck parts back down toward the blades.) Add all the other ingredients (except the walnuts) and process for a while. Add the walnuts once the mixture is perfectly combined and forms into a thick ball of dough.

Use your hands and a table knife to shape the dough into a large flat square or rectangle on parchment paper or a silicone mat. Score into 14 bars. For the optional topping, mix the Gentle Sweet and cocoa powder on a flat plate and one at a time press the bars, front and back and on all sides, into the dust.

Store some in the refrigerator for near future use and others in the freezer for later use. You can transfer them to the refrigerator when you’re ready to eat.

Intro continued...... Buy up a bunch of fresh cranberries in the fall and winter and keep them in your freezer all year long so you can always make this recipe.

VARIATIONS
- CHOCOLATE RASPBERRY BOOST BARS: When you cannot find cranberries in season or if you have run out of your frozen supply, you can use the same amount of frozen raspberries, thawed and drained.
- COCONUT BERRY BOOST BARS: Omit the cocoa and add 2 tablespoons collagen, 2 tablespoons coconut flour, and 2 tablespoons whey protein. Dust with finely shredded coconut.
NOTE: To make the bars firmer and even easier to take in your purse, add ½ cup unflavored pea protein (I use Nutrasumma unflavored Fermented Pea Protein) and an additional 1 tablespoon coconut oil and 2 tablespoons Gentle Sweet.
