Instructions

  1. Place the hot water and gelatin in a blender and blend until the gelatin is dissolved. Add the coconut oil and blend again. Add the okra and blend until perfectly smooth. Now add all the other ingredients (except the piecrust of course) and chocolate chunks, and blend really super-duper well.
  2. Pour the filling into the crust and sprinkle the chocolate chunks over the top. Some will settle into the filling and some will stay on the surface.
  3. Transfer the pie to the refrigerator to set for a few hours.

Wigglemallow Pies:
"Mmm . . . this pie is so marshmallowy, yet creamy with the cutest bit of a wiggle. We happened on this recipe by accident. We were working on perfecting our Skinny Chocolate Truffles (page 384) and had copious amounts of truffles that hadn’t quite hit the bull’s eye texture.  It seemed horrific to waste them, so we went a bit “mad scientisty” in the kitchen.  Lo and behold, this pie was born. It is truly the redheaded stepchild of another recipe, but we fell in love with it and the name just flowed.  It was a true Lion King moment; we lifted the Wigglemallow cub into the air and proclaimed it heir to a page in the book.  Below are our two favorite versions.  Mocha would be a nice change, too.  The collagen here is for extra protein and a balanced amino-acid  profile.  Allergen-free folks can use unsweetened almond milk or the cream from the top of a can of full-fat coconut milk instead of the whipped cream or use Whipped No Cream (page 490)."

SERVING IDEA: If desired, top the pie with whipped cream or Whipped No Cream (page 490) and shavings of grated Skinny Chocolate (page 377) or 85% dark chocolate.
