Instructions

  1. Preheat the oven to 350°F. Line 12 cups of a muffin tin with parchment cupcake liners or lightly coat the muffin cups with coconut oil spray.
  2. Put the frozen cherries in a food processor and process until they are broken down into smaller pieces but not all the way to mush. Measure out 3 tablespoons oats and set aside. Grind the remaining 2 cups oats to a flour in a blender.
  3. Lightly beat the egg whites with a hand whisk in a large bowl. Add the ground oats, whole oats, cocoa powder, sweetener, salt, baking powder, baking soda, yogurt, water, and extracts. Stir in the cherries.
  4. Spoon the batter into the muffin cups and bake for 20 minutes. Best eaten once fully cooled.

Note

Intro Continued......Get some more in your E meals! We like to split each muffin and top with just a smear of butter or coconut oil to stay in E mode, or if you are not a purist, squirt on a little fat-free Reddi-wip. You could also top with some Handy Chocolate Syrup (page 371).
