Instructions

  1. Place the chicken thighs in the crockpot.
  2. Remove the leaves from the cilantro and chop half of them (save stems for blending). Add the chopped cilantro, diced onion, julienned peppers, and Not Naughty Rice (if using) on top of the chicken.
  3. Blend the remaining cilantro (stems and remaining leaves) with the okra, lime juice, and seasonings. Pour over the chicken and the veggies.
  4. Cook on high heat for 6 to 8 hours.

Note

If you choose to not use konjac oodles, this dish is delicious served over Cauli Rice (page 225) for those needing to stick to single fueling or brown rice for growing children, as a Crossover.

FOR FREEZER-TO-CROCK PREP: Label frozen bags of chicken thighs as “Cilantro Lime-Burst Chicken Thighs” with a Sharpie. Blend half the cilantro with the lime juice, okra, and seasonings and pour into freezer bag. Add the peppers and chopped cilantro and label the bag with name of recipe. If you intend to include the TH Ancient Wisdom Noodles, write “needs Ancient Wisdom Noodles” as a reminder. Put the chicken and sauce bags in the freezer next to each other. The morning before cooking (24 hours prior), place both bags in the refrigerator to thaw. Next morning, pour off any excess fluid from the chicken and add the chicken to the crock, then add the bag of sauce and veggies, and the optional konjac noodles (if using).
