Preheat the oven to 350°F. Spray a 9 × 5-inch (standard) glass loaf pan with coconut oil. You want your pan to be as straight-sided as possible.

Make the bread batter with the changes indicated.

Make the cinnamon swirl. Put one-fourth of the batter into the loaf pan. Sprinkle extremely liberally with cinnamon (meaning keep sprinkling cinnamon until you get a good, well-covered, dark layer), then sprinkle on 1 Tbsp of the Gentle Sweet. Spoon in another one-fourth of the batter and sprinkle once more very generously with cinnamon and another 1 Tbsp of Gentle Sweet. Repeat one more time. Then add the final one-quarter of the batter to the loaf pan. Bake as directed in the WWBB recipe (page 242).
