Cookie Bowl Oatmeal
Description
Cookie Bowl Oatmeal received it's title because we think it tastes like "No Bake Cookies", Pearl shares.... "It is a fantastic breakfast that you only have to pull out of the refrigerator in the morning. Prepared the night before and all you have to do the next morning is grab my from the fridge and dig in. Pearl chats: This recipe gets its title because I think it tastes similar to No Baked Cookies. Hey, it has similar ingredients like oats, cocoa, and peanut butter, so why not? My husband has always detested oatmeal yet his favorite cookie has always been the No Baked Cookies. I finally figured a way to make an oatmeal breakfast that he actually likes, (no, loves!) by borrowing the flavors from that cookie. His grin is so huge when he eats it for breakfast.
I learned a fantastic trick from some internet bloggers about making bigger bowls of oatmeal while reducing calories at the same time. The food blogger, www.chocolatecoveredkatie.com calls this idea, “Voluminous Oatmeal.” Hungry girl, (TV chef, cookbook author and internet blogger) calls this “Growing Oatmeal,”but they both base their oatmeal bowls on the same cool idea.
Basically, you mix way less oatmeal grain with way more water than is normally called for when making oatmeal. If you leave this concoction in the refrigerator overnight, the oats swell up and create a huge bowl of oatmeal for less calories. Bottom line—get full by eating more, although you are actually eating less. I love that sort of wizardry. I realized this would work for our pound kicking Fuel Pull meal style since the grain amount is very minor as it has been pulled. I set out to make our version a healthy, yet sinfully treat-like breakfast, and what do you know? It worked! Glucomannan is the final touch that binds the recipe together into a perfect spoonable consistency and chia seeds offer super food power to help you charge through your day.
