Preheat the oven to 350°F.

Make the filling. Brown the meat in a large skillet over medium-high heat. If the meat is not grass-fed beef, drain off most of the fat.

Add the tomatoes and chilies, eggs, half the cheese, and the seasonings and combine well. Pour into a 9 × 13-inch baking dish, spreading out the filling evenly. Top with the remaining cheese.

Make the the cornbread topping. Put all the topping ingredients into a food processor and process until well combined. Spread the batter gently and evenly over the filling (topping does not have to go to the very edges of the dish). Spray the topping with the coconut oil.

Bake the pie for 35 minutes. Broil the top for another 3 to 5 minutes. Watch carefully so the cornbread crust does not burn but gets a nice golden brown.

Serving Ideas: Enjoy with a big side salad which may be enough, but a side of green beans or buttered broccoli is always a winner with this meal. The little amount of corn here is only in garnish amounts and should not interfere with your S fuel.
