Pearl takes Serene's original "Yuck Yum Bitty" and transforms it into a Drive Thru Sue-version! Serene calls this version "Counterfeit", but approves it as the flavor is out of this world yum-yum! This is a lemony version that is quick and easy and lighter in fuel. This is a single or double-serve recipe. Instructions

  1. Place the unsweetened cashew milk (or unsweetened almond milk) and chia seeds into a blender. Blend for about a minute until the chia seeds are ground fine like black pepper.
  2. Add the kefir, lemon juice, baobab, vanilla extract, stevia extract powder, whey protein powder, collagen, and gluccie to the blender and blend for about 30 seconds.
  3. Pour into a quart-sized glass. The mixture will not fill the glass. (If you would like to fill the glass for a filling breakfast or lunch, add 1/4 to 1/2 cup of water and 1 tsp MCT oil. Blend some more.)
  4. Allow to sit for approximately 30 minutes as the Counterfeit Yuck Yum Bitty will thicken as it stands. Pearl enjoys drinking hers room temperature, after it has sat on the counter for 30 minutes or so. You can refrigerate it if you prefer yours cold.

NOTES:

  • This is a Light S recipe and can be used for a meal such as breakfast or lunch.
  • Snack Size: You can make a snack size  by reducing all of the ingredients by half and use as a snack.
  • This original recipe called for double fermenting store bought kefir by letting it sit at room temp for 24 hours. After further research, THM no longer recommends this method due to evidence that it may not further reduce the carbs nor does that method increase the microbes as we had originally hoped. Please use your homemade kefir for this!
