Place all the ingredients (except the cauliflower, peas, and heavy cream) in the crockpot and stir. Cover and cook on low for 5 to 6 hours. If adding the cauliflower and peas, add them in the last hour.

Break up the chicken just a little (don’t shred). If including the heavy cream, stir it in at the end. Taste and adjust the seasonings until you smile and say, “Serene and Pearl . . . you rock!” (Sorry, couldn’t help it.)

"The creaminess of this Indian dish comes from the metabolism-revving coconut milk. This makes it a wonderful dairy-free meal since the heavy cream is not necessary at all but does shoot the yum factor through the roof!
Electric Pressure Cooker Instructions: Open cans of coconut milk from the bottom, and pour the liquid only into the pressure cooker. Set aside the coconut cream to add later. Mix together the remaining ingredients (except optional heavy cream, cauliflower and peas). Cook on High Pressure for 8-10 minutes and use natural pressure release for 5 minutes. Stir in coconut cream and optional peas and or cauliflower, if using. Bring to pressure again for 1 minute. If including heavy cream, stir in just before serving.
NOTE: This recipe was created and tested using a 6-quart Instant Pot. If you are using a different brand or different size electric pressure cooker, consider modifying the recipe as your results may vary from ours. Example: If you are using an 8-quart, consider adding more liquid as the larger circumference often needs more liquid to come to pressure.

MAKE A FAMILY MEAL: Enjoy this over Cauli Rice (page 263) or sautéed konjac rice, or just have it in a bowl alone with a side salad. Growing children or others at Crossover stage can enjoy this over whole-grain rice.
NOTE: Some curry powders are milder than others, so you may need another tablespoon or so if you taste this toward the end of cooking and the flavor is not “curryish” enough for your preference.
