Creamless Creamy Chicken

Servings: 1

Description

This recipe is one of our Quick Single Skillet Meals that begins on page 75 of the Trim Healthy Cookbook. There's no cream to be found in this recipe, but you wouldn’t know it. This is a fast, filling Fuel Pull lunch (or even a supper, if you are on your own).

Ingredients

Cooking Mode Disabled

Instructions

  1. Put the cabbage in a small skillet with 1/3 to 1/2 cup broth. Cook over high heat until tender, stirring occasionally.
  2. Reduce the heat to a simmer. Add the cheese and all the seasonings except the Gluccie. Stir until the cheese breaks down and melts into the broth. Simmer for about 1 minute, then add the chicken.
  3. Decide if you want more sauce or not. If so, add the remaining 1/2 cup broth. Sprinkle in the Gluccie (if using) and whisk well until somewhat thickened. Taste and adjust the flavors.

Note

Recipe Notes

Quadruple or more the recipe and feed the whole family this lovely dish, but make sure the children get some whole grains or fruit for some carbs (children don’t need Fuel Pull meals).

Want to feel super filled up without changing the FP status or adding even 1 calorie? Add a rinsed and drained single-serve package of Not Naughty Noodles to the skillet and allow the noodles to soak up the flavors. There is no way you’ll be hungry after eating that much.
