Creamy Broccoli and Cheese Soup – Single Serve

Get filled up fast for lunch (or use these for a quick dinner) and allow the healing ingredients to work their health promoting, slimming powers in your body. Put the broth, veggies, and seasonings in a small saucepan, cover, turn the heat to high, and bring to a quick boil. Reduce the temperature to medium-high and simmer the veggies until they are tender (takes just a few minutes).

Transfer the mixture to a blender and add the cream cheese. Make sure the lid is secure, and blend well for a few seconds. Turn the blender off, vent the hot air, then continue to blend until it’s a smooth puree.

Pour the puree into the saucepan, bring back to a simmer over low heat, then add the cream. Stir to warm through and taste to adjust the seasonings. Top with bacon bits (if using).
