Creamy Herb Chicken-Single Serve

Ingredients
  • coconut oil spray
  • 1 chicken breast (fresh or thawed from frozen)
  • 2 Tbs 0% Greek yogurt
  • 1 tsp mayonnaise (1-2 tsp)
  • 1 Tbs Parmesan cheese (finely grated; green can is fine)
  • 1 sprinkle dried parsley
  • 1 sprinkle oregano
  • 1 sprinkle TH Mineral Salt
  • 1 sprinkle black pepper
  • 1 sprinkle garlic powder
Instructions

    Preheat the oven to 425°F.
  2. 2
    Spray a shallow baking pan with coconut oil cooking spray and place the chicken breast on the pan.

    Mix all other ingredients and generously spread on the chicken. Sprinkle a little more Parmesan on top of each piece. Bake for 25 minutes, or until the tops of the chicken are golden brown and the meat is cooked through or until done.
