This is flavorful, hearty eats and so versatile! Please don’t be scared if you are not a spice lover. Just be sure to buy the original Frank’s hot sauce, not the “hot” kind. And if you’re still timid, pull back the amount of sauce to 1 or even 1/2 cup. That will give you a very mild heat level but still lots of flavor. This recipe is found in the “Sanity-Saving Crockpot & Electric Pressure Cooker Meals” section of Trim Healthy Table Cookbook, page 92. This recipe is a family-serve recipe that feeds 6 to 8 people.

From Trim Healthy Table~
ELECTRIC PRESSURE COOKER DIRECTIONS: Add all the ingredients except the sour cream to a pressure cooker. Seal and cook at high pressure for 12 minutes. Use natural pressure release for at least 10 minutes, followed by quick pressure release. Stir in the sour cream and shred the chicken.
NOTE: This recipe was created and tested using a 6-quart Instant Pot. If you are using a different brand or different size electric pressure cooker, consider modifying the recipe as your results may vary from ours. Example: If you are using an 8-quart, consider adding more liquid as the larger circumference often needs more liquid to come to pressure.

MAKE A FAMILY MEAL:
- For the weight-loss plan, enjoy this over Cauli Rice (page 263), stuffed into hollowed-out zucchini and baked for 15 minutes at 400°F, or wrap this (see Note) in lettuce wraps or Wonder Wraps 2 (page 251) or stuff it into low-carb tortillas or pitas with sour cream and grated cheese . . . or it
can be the tasty protein to jazz up a big salad! Ways to enjoy this dish are endless! - Growing children can have a healthy carb side like a piece of fruit, whole milk, or a whole-grain bread item for a Crossover.
NOTE: When wrapping or stuffing this into lettuce or tortillas, use a slotted spoon or tongs to remove
the chicken from the crockpot and try not to get too much of the broth so it won’t be too messy.
