Instructions

  1. Fill large mixing bowl 3/4 to top with hulled, sprouted buckwheat.
  2. Add 3 cups unsweetened dried coconut, 1 coffee grinder full chia or ground flax seed, any additional raw nuts and seeds (soaked overnight in water and 1 tsp mineral salt), and an optional handful of goji berries or unsweetened dried cranberries.
  3. Splash in pure vanilla, cinnamon, and sea salt to taste.
  4. Add plan-approved sweetener to taste.
  5. Drizzle enough virgin coconut oil to get ingredients wet and combined (slightly warm the jar of oil in a pan of hot water to melt it first if you need to). If you can't afford all virgin coconut oil, use half (or all) cooking coconut oil which is a lot cheaper, or use extra virgin olive oil.
  6. Get your hands involved and plunge them into the mixing bowl, stirring and rubbing ingredients together very well. You don't want a mouthful or stevia or salt.
  7. Place mix on dehydrator trays. Don't worry, it won't fall through holes if you do it gingerly.
  8. Dehydrate until crispy, which is usually overnight. If you don't have a dehydrator, place on oven tray and dry in your oven at your lowest setting.

Recipe Notes

Since this recipe as written is an S Helper recipe, not an E, due to the generous fats, we suggest pouring either full or low-fat kefir, Greek yogurt, or unsweetened almond milk over your granola. Combined with Greek yogurt, the flavor and texture is a match made in heaven.

The tart, creamy cultured dairy with the sweet crunch of the granola are divine. Using this recipe as a dessert, you could splurge and enjoy a generous swirl of undiluted cream. This granola also makes a great sprinkle over a Cottage Berry Whip or on top of Tummy Tucking Ice Cream.
