"Dairy Free Pancakes"!!! You do not have to be dairy free or have any allergies or sensitivities to dairy at all to enjoy these pancakes! This is a way to have Trim Healthy Pancakes without using pasteurized dairy which makes Serene, very happy and if you are also a "Purist Peep, you will be happy about this too!!! These Dairy Free Pancakes are a very slimming energizing E Meal to enjoy, especially if you possibly have been indulging in too many Heavy S meals and may need to lighten things up just a little bit. Pearl calls this one of her "balancing meals" and finds that this kind of meal can actually spike your metabolism and help you to get back on track. This recipe will make enough pancakes for 3 servings. Each serving is 3 nice size pancakes.

Instructions

  1. Grind the oats in a blender until they form a powder.
  2. Add the egg whites, unsweetened almond or cashew milk, apple cider vinegar, vanilla, sweetener, the baking powder and the optional collagen or gelatin to the ground oats.
  3. Blend all of the ingredients in your blender for about one minute and thirty seconds or until combined. Let the batter set up just a little bit before making the pancakes.
  4. Spray your pan or griddle with coconut pan spray then preheat your pan over low-medium heat or your electric griddle to 275-300 degrees.
  5. Pour a small amount of batter onto your pan or griddle and make 3 separate pancakes. As the batter of each pancake starts to firm up on the griddle some, you can go back and spoon some more batter onto the existing pancakes and add to them and make your pancakes a bit bigger.
  6. Cook the pancakes for approximately one minute on each side or until done to your liking.
  7. If using the thawed blueberries, you can place them on a plate under your griddle to warm while you are cooking your pancakes as shown in the video or warm them gently on top of the stove. You are not cooking them, you are just warming them.
  8. Pour the warmed blueberries on top of the pancakes.

Serving Suggestions from Pearl & Serene: 

  • If you choose not to use the optional collagen or gelatin in the pancake batter, you may add a scoop of TH Integral Collagen, or TH Just Gelatin to your coffee or tea.
  • You can use the Lazy Collagen Coffee recipe or the Collagen Tea recipe if you would like.
  • You can top your Dairy Free Pancakes with any stevia sweetened syrup, a store-bought sugar-free syrup, or you can use the TH Pancake Syrup recipe, or the Mah-Velous Maple Syrup
