1 Multiple-Serve Recipe

Instructions

  1. Preheat the oven to 350°F. Line two 9 × 13-inch baking sheets with parchment.
  2. Put all the ingredients in a food processor and process well for 2 to 3 minutes. Don’t worry if the mix is still a little crumbly.
  3. Transfer the cheese mixture to a large bowl and press the crumbles together into a very loose dough. Grab teaspoonsize pieces and press into balls with your fingers (a fun job for children). Place the balls on the prepared baking sheets.
  4. Press each little ball flat with 2 fingers or squish with the bottom of a jar. They should end up about the size of a small, thin zucchini slice, or about as big as a typical store-bought cheese cracker. Bake for 12 to 15 minutes, or until golden.
  5. Allow the crackers to fully cool so they can crisp up. If crackers lose their crispness after a day or so, reheat in a 300°F oven for 5 to 10 minutes.
