Soak the figs in the ½ cup water overnight (or for several hours).

Once you’re ready to make your shake, stir the gelatin into the boiled water. Add the fennel seeds (or tea bags) and steep for 5 to 10 minutes. Strain through a fine-mesh sieve into a bowl and stir in the oil.

Drain the figs, discard the water, and place the figs in a blender. Add the fennel tea, kefir, lecithin (if using), collagen, salt, vanilla, and stevia. Blend until the figs are completely smooth. Add the ice and blend again. Add the whey and blend to perfection. Taste and adjust the flavors to “own” your figginess.

Intro continued......Fresh figs are a lovely E fruit but are hard to find year-round and are expensive, and the dried fruit is seldom eaten on the THM plan. What to do, what to do? No worries, if you soak dried figs overnight and let them reabsorb their water content, they work beautifully in this E smoothie. The soaking releases some of the fruit sugars from the figs into the water so they are easier on your blood sugar.
