These are a new twist on our original Trim Healthy Pancakes. The banana and the addition of Baking Blend brings them to a whole new sweet and fluffy level. Top with berries, Basic Pancake Syrup (page 516), or a close to plan-approved store-bought syrup, and an optional dollop of Greek yogurt. Make up a batch of these, eat three for your meal, and then refrigerate leftovers between paper towels for the rest of your week (or freeze leftovers in baggies). Put the rolled oats in a blender and blend until they become a powder. Add all the other ingredients (except the cooking spray) and blend well. Allow the batter to set up for 5 minutes.

Turn an electric griddle to medium heat. Once hot, spray the griddle with coconut oil. Spoon the batter onto the griddle to make 3 pancakes. Cook on one side for about 3 minutes, then flip to cook on the second side for a couple of minutes.
