1 Multiple Serve Cake

Instructions

  1. Preheat the oven to 350°F. Thoroughly spray an 8-inch square cake pan with coconut oil.
  2. Whisk together the Baking Blend, sweetener, salt, and baking powder in a large bowl. In another bowl, mix the whole eggs, egg whites, melted butter, and coffee well. Add the wet ingredients to the dry and whisk all together well. (Or put all the ingredients in a food processor and process well, which in our minds is just easier.)
  3. Pour the batter into the cake dish and bake for 30 minutes.
  4. Meanwhile, make the frosting. Put all the ingredients (except the ground espresso) in a blender and blend until thickened. Place the frosting in the fridge.
  5. Cool the cake in the pan, then frost inside the pan. Sprinkle ground espresso beans over the top.
