Instructions

  1. Preheat the oven to 350°F.
  2. Put the oats in a blender and blend until they turn to a powder. Turn off the blender and add the cottage cheese, egg whites, Super Sweet Blend, vanilla, and baking powder. Blend well. Add the blueberries to the blender jar, but do not blend; just stir them into the batter.
  3. Lightly coat a 9 × 13-inch baking dish with coconut oil spray. Pour the batter into the pan and bake for 35 minutes, or until golden brown on top .

"Since we’re already in E mode here, you can also use other frozen fruits, like cherries, peaches, or even pineapple or mango in place of the blueberries.
