This bread is Focaccia-style. It can be used with as much diversity as your imagination can provide. It is easy, quick, and absolutely delicious. It is a hearty peasant-like bread that can be sweetened to make a spice or banana bread, kept savory for sandwiches, or even used as a pizza base. It’s great for dipping and ripping, too! Instructions

  1. Preheat the oven to 350°F.
  2. Put the flax meal, mineral salt, Super Sweet Blend, coconut oil, egg whites, and water in a food processor and process until smooth. Add the baking powder and process again for just a few seconds, or mix in a bowl by hand. Allow the batter to sit for about 5 minutes to thicken.
  3. Line a 9 × 15-inch baking sheet with parchment. Pour on the batter and spread thinly to the edges with moistened fingers. If desired, sprinkle the top with the rosemary and Parmesan.
  4. Bake for 20 minutes.
  5. Let cool briefly, then cut into 10 to 12 pieces - or tear off hunks, as desired.
