Life is not life without the comfort of a peanut butter and jelly sandwich. You can make it three different ways . . . either E, FP, or S. No missing out! If you have Trim Healthy Mama Cookbook and keep Peanut Junkie Butter around, you can use that for the peanut spread on the E and FP versions. If not, we have a quick peanutty spread here for you that is E and FP friendly and takes only a minute to whip together. We love the option of including half a sliced banana for the E version, but that is up to you. This recipe is found in the “Hangry Meals for One” section of Trim Healthy Table, page 301, and is a single-serve recipe.
