Marinate the chicken. Combine the olive oil, oregano, salt and pepper, and lemon juice in a glass or ceramic bowl and add the chicken. Cover and put in the fridge to marinate for 30 minutes (or you can put it in earlier in the day for a longer marinade).

While the chicken is marinating, prepare the salad. Put the lettuce in a large bowl or into individual bowls. Top with the cucumbers, tomatoes, onion, olives, feta cheese, and dressing. (Put the onion in a bowl on the side if you have children who are not keen on them.)

Coat a large skillet with coconut oil cooking spray and heat over medium-high heat. Add the chicken and brown on all sides. Cook until done through and crisp, about 10 minutes.

Top salads with the chicken pieces or place it in a side bowl so each member of the family can take what he or she wants.
