Enjoying this muffin for breakfast is one of Gwen’s favorite ways to start her day and part of the reason she lost 45 pounds to get to goal weight. She pairs it with stevia-sweetened Greek yogurt mixed with fresh lemon juice and the berry syrup on her blog, which is similar to our Slim Belly Jelly (page 478), but made with the minimum amount of gluccie. Both coconut flour and golden flax meal are easily found, rather inexpensively, at most grocery stores these days, so go ahead and give this a try.This recipe is in the “Sweet Treats – Quick Single Muffin” section of the Trim Healthy Mama Cookbook, page 278. Makes 1 large “muffin in a mug” or 2 smaller muffins in the oven.

Instructions

  1. Preheat the oven to 350°F if baking the muffins. Lightly spray an 8-cup muffin tin with coconut oil cooking spray.
  2. Combine all the ingredients in a coffee mug if microwaving or in a small bowl if baking. Stir with a fork. Mix really well to make sure that the ingredients are evenly incorporated. Cook in the microwave for 50 seconds or so (this muffin is much yummier a little underdone versus overdone). Or spoon the batter into 3 of the muffin holes and fill remaining cups with water (for nice steaming effect) and bake for 12 to 14 minutes, until muffins are almost done but still slightly gooey on top.
