These are a spin-off from the Superfood Chocolate Chews (page 383), an amazing protein bar with close to 25 grams of protein (part of it coming from the glycine-rich collagen). They’re perfect for a slimming, on-the-run afternoon snack. Each bar contains 5 grams of fat (mostly from the nuts) and negligible carbs, so they just fit into FP mode; add any more fat to your snack and you are in S mode, which is perfectly okay. - Place the whey, peanut flour, collagen, sweetener, and salt in a food processor and blend well. Add the oil and extract and blend again. With the processor still on, add the water, 1 tablespoon at a time, adding just until the mixture is sticky enough to press together. Add the chopped pecans and pulse just a few times to mix.
- Scoop out the mixture onto a piece of parchment and form into a flat rectangle. Cut into 5 bars.
- Place in the refrigerator to firm up. You may wrap the bars individually in wax paper.
