Soak 2 lbs green split peas overnight or during the day for about 7 hours. Use ample water for soaking and 2 Tbs of apple cider vinegar to remove phytates.
Toward the end of the cooking, add 3 Tbs of cream to help unify the flavors ad give a touch of fat. There is no other fat in these ingredients so this amount of cream in such a big soup stays within E guidelines.
Recipe Notes
This may be served with warmed and buttered whole wheat pita bread for the growing children and a glass of milk, preferably raw. You could have a piece of sprouted or homemade sour dough toast or some of our approved crackers. Of course, a wonderful accompaniment to any soup meal is a lovely, fresh salad. Since this soup makes a large batch, you can freeze leftovers to be reheated for "no brainer" nights.
