PEARL CHATS: Ever have those nights when nothing but an insanely simple dinner recipe will work otherwise you’ll go insane? Yeah, that’s me all too often. This is both insanely simple yet insanely tasty, and it’s all hot and ready within 30 minutes! Sometimes you need a break from sneaky ingredients, too. We’ll put plenty of sneaky stuff (like okra and other veggies) in other soups, but not here, so not even a blender is needed. Instructions

  1. Put all the ingredients except for half the cilantro into a large soup pot. Bring to a low boil, then cover and simmer over medium-low heat for 20 to 25 minutes. Own the flavors . . . add more seasonings after tasting if you like. Sprinkle with the remaining cilantro when serving.

MAKE A FAMILY MEAL:

  • For the weight-loss plan, there is still room in your E quota of carbs for a few crumbled baked corn chips to top this soup. Delish! Or dollop with some 0% Greek yogurt. For a more filling factor, enjoy with a side salad with an E-friendly dressing.
  • Growing children or other Crossie family members can enjoy with lots of grated cheese for a Crossover.
