You can get creative with the seasonings, too. Our favorite is the simple salt and nutritional yeast used here, but you can also sprinkle on Rohnda’s Ranch Seasoning (page 492), or taco seasoning, or Trim Bouillon Mix (page 491)—or even some white vinegar. You can make several batches at a time if you want to share these with others. Instructions

  1. Preheat the oven to 375°F. Line a large baking sheet or pan with parchment.
  2. Lay the kale on the prepared baking sheet, pour on the coconut oil, and sprinkle with the salt and nutritional yeast. Toss all together with your hands, then spread out the kale evenly on the baking sheet.
  3. Bake for 8 to 10 minutes, keeping a good eye out so that the kale doesn’t burn (though we like ours a little browned and crisped).

For an FP version, omit the oil or butter and spray the leaves with coconut oil spray before seasoning.
