You can also add a teaspoon of caramel or maple extract to really jazz things up!” This recipe is a bit outside the box as it contains both a small amount of S (butter) and E (applesauce) ingredients. But, in these little portion sizes, two cookies can squeeze into an FP treat as you enjoy them with a mug of warm tea or hot coffee!

Instructions

  1. Preheat oven to 375°F.
  2. In a large bowl cream the butter and brown sugar replacement together until fully combined. Then add the egg whites and extract (if using) mix well. Set aside.
  3. Place dry ingredients into a bowl and mix thoroughly.
  4. Add the dry ingredients to the wet ingredients and mix well until combined. Next, add in the applesauce and mix again.
  5. Line a baking sheet with parchment paper.
  6. Roll the dough into small balls and flatten.
  7. Bake for 10-12 minutes.
  8. Remove from the oven and allow them sit for at least ten minutes on the baking tray before placing on a plate or in a storage container.

The sweetener and black strap molasses can be replaced with a plan-approved brown sugar replacement. Esther generally uses Lakanto Golden Monkfruit Sweetener.
