PEARL CHATS: Here’s another way to make plain ol’ chicken breasts or tenders amazingly good! My husband declared this tastes like something from a good restaurant… and he can be picky, so I took that as a win! If you have big eaters in your fam, use 3 pounds of chicken, but make sure to up the cream and butter amounts by a couple tablespoons each to compensate. This recipe is found in the “Oven-Baked Meats & Fish” section of Trim Healthy Table Cookbook, page 222. This recipe is a family-serve recipe that feeds 6 to 8 people. (Halve the recipe if your family is smaller or make in full and freeze half.)

Instructions

  1. Preheat the oven to 425°F.
  2. Put the tenderloins or breasts in a 9 × 13-inch or oval baking dish. Sprinkle liberally with the seasonings and thyme.
  3. Combine the melted butter and lemon juice in a small bowl. Add the cream and garlic and whisk well. Spoon over the top of the chicken and spread out the mixture so the tops of all the chicken are well covered. Sprinkle on the Parmesan.
  4. Bake for 20 minutes for tenderloins or 25 to 30 minutes for breasts.

MAKE A FAMILY MEAL:

  • For the weight-loss plan, pair with Cauli Rice (page 263) and a side salad with an S-friendly dressing.
  • Growing children and others needing Crossovers can enjoy this with brown rice or quinoa to soak up all the tasty sauce from the chicken.
