Description


Tart lemon curd fills this buttery crisp tart shell to create a decadent S dessert. This recipe was created by the talented Jennifer Morris.

Ingredients
    Lemon Curd
  • 1/2 cup butter (1 stick)
  • 1/2 cup lemon juice
  • 3-4 Tbs TH Super Sweet Blend
  • 6 egg yolks
    • Tart Crust
  • 4 Tbs butter (or coconut oil)
  • 1/4 cup almond flour
  • 1/4 cup coconut flour
  • 1 tsp heavy cream (or coconut cream)
  • 2 doonks TH Pure Stevia Extract Powder (to taste)
  • 1/2 tsp TH Natural Burst Vanilla Extract
  • 1 pinch TH Mineral Salt
Instructions

    For the curd, melt butter in a small saucepan.

    Add lemon juice and sweeteners, and adjust sweetness to taste, stirring until dissolved.

    Remove from heat, and add egg yolks, while whisking well.

    Return to heat. Stir & cook until well thickened.

    For the crust, melt 4 Tbsp of butter in a pie plate.

    Add almond & coconut flours, salt, cream, and vanilla.

    Blend together with a fork, and sweeten to taste.

    Press into pie plate.

    Bake for 10 minutes at 350 degrees, and allow to cool.

    When cooled, fill with curd, and chill.
