This is a tweak on the original basic, Wonder Enchilada Casserole. Despite this being a Fuel Pull, this is hearty good eats! It might just become your favorite way of eating enchiladas and will allow you more of that “fuel juggle” we keep urging you to keep in your life. This is a tweak on the original basic, Wonder Enchilada Casserole. Despite this being a Fuel Pull, this is hearty good eats! Enchilada Gravy:

Instructions

  1. Preheat the oven to 350°F.
  2. Brown the ground meat and rinse away excess fat.
  3. Meanwhile, put all the enchilada gravy ingredients in a blender and blend well.
  4. Add the enchilada gravy to the browned meat.
  5. In the blender, blend the Laughin’ Mama Cheese with the egg whites, extra salt, and extra cumin.
  6. Spray a 9 × 13-inch baking dish with coconut oil cooking spray. Start your layering, beginning with half of the gravymeat mixture, then a layer of Wonder Wraps, slightly overlapping. Drizzle half the cheese mixture over the top, then sprinkle half the tomatoes over the cheese. Repeat the layers—meat/gravy, Wonder Wraps, cheese/egg white mix, diced toms—then top with a finale of diced green chilies.
  7. Bake for 30 minutes, uncovered, then cover with aluminum foil (or another tray as a lid) and bake an additional 20 minutes. When done, let set for 15 to 20 minutes before serving.

Usually we suggest a 3 to 4 ounce meat limit for FP meals. Once ground beef is browned, it loses weight. So even if just slightly over FP amounts here, it still can fit FP mode.
