We love chicken legs because they are one of the most inexpensive cuts of meat! Perfect for budget-minded Mamas feeding hungry mouths. And don’t worry, we do mean only a little spicy here. These are kid friendly; they have just enough spice to let your mouth know it’s flavor time! If your family is as heat loving as ours are, add the optional cayenne for more of a kick. (Halve the recipe if your family is smaller, or make in full and freeze half.)

Instructions

  1. Preheat the oven to 375°F.
  2. Pierce each chicken leg several times with a sharp knife, pulling downward to create holes in the chicken skin and meat so the flavors can creep in.
  3. Mix together the melted butter, sweetener, and all the seasonings in a bowl. (It will become a paste.) Dip each drumstick into the paste, then use your hands to smear it all over the chicken, making sure each piece is well coated with the spice mixture. It will be clumpy; no worries, it will melt in the hot oven. Place the chicken pieces on 2 shallow baking pans or 1 extra-large pan.
  4. Bake for 45 to 50 minutes, turning the pieces a couple times. At the end of cooking, turn the oven to high broil and crisp the top of the drummies even more for a few minutes. (They should be very browned, but not burned, so keep an eye on them while you broil.)

Note

MAKE A FAMILY MEAL:

  • For the weight-loss plan, pair this with a side salad and an S-friendly dressing. Add a steamed or roasted non-starchy veggie if you like, seasoned up well and tossed with a little butter.
  • Growing children or others at Crossover stage can enjoy a healthy carb on the side such as brown rice or quinoa noodles, or end the meal with a piece of fruit.
