Loaded Fotato Soup

Ingredients

Put the cauliflower and fat-free chicken broth in a saucepan.

Bring to boil then simmer until the cauliflower is tender.

Scoop cooked cauliflower out and place in blender. Blend until smooth and return to saucepan.

Add the light Laughing Cow or Weight Watchers cheese wedge to saucepan. Heat to melt cheese, dispersing it with a whisk.

Season with sea salt, black pepper, optional Bragg Liquid Aminos, garlic or onion powder, a sprinkle of nutritional yeast and dash of cayenne pepper.

Add 2 tsp turkey bacon bits.

Thicken soup to desired consistency by sprinkling in glucomannan or xanthan gum from a salt shaker little by little, and whisking briskly. This soup should be a thick consistency to resemble a potato based soup.

Garnish with optional green onion.

Recipe Notes
NOTE: You can up the protein content by adding some leftover chicken breast or stirring in a scoop of Integral Collagen and you’ll still remain in FP mode. Or enjoy some Superfood Chocolate Chews (page 383) or a Praline Protein Bar (page 391) for dessert; however, that will take you into S mode.
