Preheat the oven to 350°F.

Cook the squash until tender, then scoop out the “spaghetti” using a fork. (You can cook the squash in a crockpot all day; or slice it in half and bake face down on a coconut oil–sprayed baking pan at 350°F for 45 minutes; or cook the two halves for 4 to 5 minutes in a pressure cooker.) Keep the oven set to 350°F.

In a large bowl, mix the squash with 1 cup of the cheddar cheese and the remaining ingredients. Mix well and place in a 9 × 13-inch baking dish. Top with the remaining cheddar cheese and bake for 30 minutes or until bubbly.
