Marcy’s Cheesy Rolls
Description
The magic ingredient in this recipe is glucomannan. Glucomannan is one of your new best friends and wears many hats. We thank Marcy, aka (Marcea), from lowcarbfriends.com for this recipe. Marcy, who was kind enough to let us include the recipe, has a background in baking, specifically with pastries. One batch of this recipe makes six delicious rolls. They are quite sturdy, so you can cut them in half and fill with whatever sandwich fixings you like. They are a little sturdier than Oopsie Rolls.

Ingredients
Instructions
-
Crack four eggs into electric mixer bowl and beat until fluffy
-
While beater is still going, add 1 Tbs. olive oil and 3 Tbs. water.
-
Add ½ tsp. garlic or onion salt and 1 Tbs. aluminum free baking powder to the bowl
-
Slowly add 4 tsp. glucomannan (the best way to do this is put the amount in an empty salt shaker and sprinkle it in slowly while the beater is going).
-
Beat for several minutes, probably longer, depending upon the power of your appliance. Sometimes it can take ten minutes at least to get the right consistency. It should be a very thick pudding mixture which leaves waves when ready
-
Take bowl out of beater, add 1 cup finely grated cheese to dough, and mix well with a spoon
-
Drop 6 ball-like shapes of dough onto a well greased tray.
-
Bake at 375 for 12–15 minutes
