Instructions

  1. Put the broccoli in a big bowl and add the bacon, cheddar, and onion (if using). Mix together the mayonnaise, yogurt, Gentle Sweet, and salt in another bowl. Pour the dressing over the broccoli and toss to coat well. Sprinkle sunflower seeds (if using) on top.

Although not Amish, Melissa and Cal moved here from Amish country with their eleven children, so Cal could help our husbands manage our fast-growing THM company. They are building a cob home with a living green roof! As you can envision, all our children have a blessed life running barefoot through the woods with all their cousins. Melissa is all the things my Drive-Thru Self has never attained but admires. She is an incredible pioneer woman, grows a fantastic garden, makes artisan sourdough bread, gathers fresh eggs every morning, and makes natural soaps, water kefir, and all kinds of fermented healthy concoctions. She brings this Amish salad (double the amounts you see here) to our big family gatherings, and we all scarf it up in record time. This is perfect to take to a church potluck, a picnic, or just to make for home use.

NOTE: If you have some of this in the fridge and want a quick meal, simply add diced chicken breast to it and you have lunch!
