Life is not all about chocolate, after all. (We thought it was, for a minute.) Sometimes you just want white cake, right? Enjoy this with the simple buttercream frosting or leave that off and use the cake as a shortcake with sliced fresh strawberries and whipped stevia-sweetened cream on top—how fabulous! Or try the Whipped NoCream (page 490) as the topping on your shortcake. You can get adventurous with this basic cake recipe, adding ½ to 1 teaspoon pumpkin pie spice and substituting a heaping tablespoon of pumpkin puree for the water—and you have a pumpkin cake. This is a single-serve recipe. This recipe is in the “Sweet Treats – Quick Single-Serve Cakes” section of the Trim Healthy Mama Cookbook, page 294.
