Muffin in a Mug

This recipe will be Drive Thru Sue's best friend, and if you have nothing in common with her, you'll love it too! It can be another of our magic tricks to keep you on plan. Who could ever feel deprived eating a decadent muffin that can be cooked in one minute? It's a perfect breakfast with a cup of coffee, or it makes a quick afternoon snack. A coffee mug becomes your muffin tin - so cute! Pictured here is the Cinnamon Version.
1 Single Serve Recipe
Ingredients
Instructions
-
Chocolate Version
-
Crack 1 egg into coffee cup and whisk it well with a fork
-
Add 1½ Tbs golden flax meal and 1½ Tbs almond flour (or grind your own)
-
Add 1 Tbs water
-
Add 1 heaping Tbs unsweetened cocoa powder
-
Add 2–4 tsp TH Super Sweet Blend or 2–4 doonks TH Pure Stevia Extract Powder or a combination of both (but many find Sweet Blend works better when making Chocolate flavored muffins).
-
Add ½ tsp aluminum free baking powder
-
Add 1 flat Tbs coconut oil, either extra virgin or cooking style like Louanna brand. It doesn‘t matter if coconut oil is solid from being cold
-
Stir vigorously (a mini workout for your right arm).
-
Microwave for 1 minute. (Serene says you can bake in the oven in a ramekin at 350 for 10–15 minutes or use a waffle iron).
-
This muffin may be made with other flavors if you do not desire chocolate. The recipe requires a total of 4 Tbs dry flour. In the chocolate version, 1 Tbs comes from cocoa powder. That’s why we only do 1½ Tbs each of flax and almond flour to make up the other three.
-
Banana Nut Version
-
Use 2 Tbs each of flax and almond flour, add chopped nuts and banana extract.
-
Cinnamon Version
-
Use 2 tsp cinnamon, 2 Tbs flax and 1 Tbs plus 1 tsp almond flour. The cinnamon version goes great with a quick icing topping made from one pat butter, one pat cream cheese, squirt of lemon, and TH Sweet Blend or TH Pure Stevia Extract to taste.
-
Volcano Mud Slide
-
Another fantastic way of making this muffin is to use 2 scant Tbs of flax along with 2 larger Tbs of extra dark cocoa powder. If you add berries for extra moisture content, or add 1 Tbs of water you can make what we like to call a Volcano Mud Slide muffin. Don’t cook it until it’s completely done. That means without berries, you will only microwave for 40 seconds instead of one minute. If using berries, you’ll need the full minute or slightly more, but don’t go all the way. The muffin should be slightly gooey in the center
Note
IP Modifications:
Put all ingredients into a mug, place on a trivet with two cups of water. Cover mug with aluminum foil to keep off condensation. Bring water to a boil and add lid, leaving the vent open. Steam for 20 minutes, leaving vent open.
