Preheat the oven to 350°F. Spray an 8-inch square baking dish with coconut oil.

Melt the unsweetened baking chocolate in a small glass or ceramic bowl set over a saucepan of simmering water (the bowl shouldn’t touch the water). Pour the melted chocolate into a large bowl and beat with the butter until creamed. Add the remaining ingredients and beat until smooth.

Pour the batter into the prepared pan and bake for 15 to 20 minutes, until just cooked on top. Let cool.

Meanwhile, make the praline topping. Combine the sweeteners and butter in a saucepan and melt over medium-high heat. Add the cream, salt, and caramel extract and let come to a boil. Reduce the heat to medium-low and cook for about 4 minutes, stirring frequently. Remove from the heat, stir in nuts and pour over the brownies. Evenly spread out the topping, then refrigerate the brownies.
