Instructions

  1. Preheat the oven to 350°F. Lightly coat a couple of baking sheets with coconut oil spray.
  2. Combine all the ingredients in a bowl. Drop by rounded teaspoonfuls onto the prepared baking sheets and bake for 15 minutes. Cool on a rack. Stuff the sandwiches (see “Suggested Cookie Sandwich Ideas” below) and chill or freeze.

SUGGESTED COOKIE SANDWICH IDEAS:

THESE ARE S OPTIONS:
• Stuff stiffly whipped heavy cream or Whipped NoCream (page 490) between them and chill (or freeze, then let thaw a few minutes before eating).

• Stuff with extra-thick Slim Belly Jelly (page 478) and whipped cream, then chill (or freeze, then let thaw a few minutes before eating).

• Whip together the following ingredients in a food processor for a decadent creamy filling with just a hint of cinnamon: 1⁄2 cup extra-virgin coconut oil, 1⁄3 cup organic pastured or regular butter, 1⁄4 cup plain 0% Greek yogurt, 2 tablespoons 1⁄3 less fat cream cheese (or, substitute 2 tablespoons additional Greek yogurt plus 1⁄8 teaspoon Gluccie), 1 teaspoon vanilla extract, 2 pinches Mineral Salt, 1 teaspoon Super Sweet Blend (or 2 teaspoons for “sweeties”), and 1⁄2 teaspoon ground cinnamon.
