Preheat the oven to 425°F.

Put the chicken pieces in a large bowl, add the peanut flour, peanut butter (if using), water, salt, pepper, cayenne, and onion powder, and combine to coat well.

Melt the butter, then pour into a 9 × 13-inch baking pan. Place the seasoned chicken on top, spreading it out to leave room between the pieces. Bake for 15 minutes.

Run the pan under the broiler for 5 to 10 minutes, or until the tops of the chicken pieces are golden brown and get ultra-crispy. Watch closely after 5 minutes, so they don’t burn.
