Preheat the oven to 425°F.

Place the chicken breast in a large bowl, add the peanut flour, peanut butter (if using), water, salt, pepper, cayenne, and onion powder, and combine to coat well.

Melt the butter, then pour into a small baking pan. Place the seasoned chicken on top of the melted butter. Bake for 15 minutes.

Run the pan under the broiler for 5 to 10 minutes, or until the top of the chicken breast is golden brown and gets ultra-crispy. Watch closely after 5 minutes, so it does not burn.

Serve over a bed of spiraled & sauteed zucchini.
