Ingredients
Instructions
-
Place the chicken broth in a large soup pot and add the garlic, green onions, bok choy, peas, and three-fourths of the diced bell pepper. Cover, bring to a boil, then reduce the heat and gently simmer until tender.
-
Put the coconut milk in a blender, add the boiled water and the core Trimmy ingredients—sesame oil, gelatin, collagen (if using), and lecithin (if using)—the peanut flour, peanut butter, Gluccie, soy sauce, fish sauce, stevia powder, Gentle Sweet, red curry paste, lemon juice, baobab powder (if using), and the remaining bell pepper. Hold the lid on tightly and blend well. Pour your Trimmy into the pot, stir well, then add the pepper flakes. Add the noodles and chicken. Taste and adjust the flavors to “own it.” Heat to the perfect serving temperature. Garnish with basil (if using) and visit Thailand for the evening.

MAKE A FAMILY MEAL:
- For the weight-loss plan, it is perfect on its own, or you can add a side salad such as the Thai-Kissed Cucumber Salad (page 268).
- A pot of steamed brown jasmine rice is extra filling for Crossover family members who can add it to their soup. If you are at S Helper stage, a ¼ cup of this rice adds a nice dimension of texture.
