Preheat the oven to 350°F.

In a bowl, combine the meat with the salsa, sour cream, eggs, and taco seasoning. Stir in the salt and bread crumbs.

Mix well, then place in a 9 × 13-inch baking dish and bake for 1 hour.

(Page 158) Pearl chats..."Meatloaf with a Mexican twist. This gets devoured in my home and if you do happen to have leftovers, it is great as an S sandwich s the next day."
Wick Fowler's taco seasoning does not have sugar or other junk. Or, to make your own taco seasoning (and replace the 2 packets of taco seasoning), combine:
- 2 tsp ground cumin
- 1.5 tsp paprika
- 3 tsp chili powder
- 2 tsp onion powder
- 1 tsp garlic powder
- 2.5 tsp mineral salt
