Perfect Pizza – Single Serve

Preheat the oven to 400°F.

Put all the ingredients in a bowl and combine well. You should have a very loose, gooey dough. If using carton egg whites in the family-serve version, allow the mix to stand a few minutes so the dough can absorb the whites before it thickens properly.

For the single serve, spread the dough out thin on a parchment– lined 9 × 13-inch baking sheet, using the back of a spoon to spread it out as much as possible. You’ll find you can keep spreading farther than you thought you could at first; your end result should be about the size of a large dinner plate.

For the family serve, divide the dough between 2 parchment– lined 9 × 13-inch baking sheets and use the back of a spoon to spread them both out to the very edges on all sides. (If you’re a good spreader you may be able to fill two 11 × 15-inch sheets for even larger, crispier crusts.)

Bake the single serve crust for 10 to 12 minutes, and the larger crusts for 13 to 15 minutes (keep an eye on them, as you don’t want them too brown).

Allow the crusts to cool for a few minutes, then top with sugar-free pizza sauce, then all your favorite toppings. Broil until your toppings are melty and crispy.
